Appearance: Green with golden hues. Filtered.
Nose: Intense aroma of fruity green olives. Great olfactory complexity between green and fruit aromas. The scent of freshly cut grass and aromatic herbs are complemented by notes of tomatoes, figs, and ripe hints of almond and apple.
Palate: Slightly bitter with delicate spice being more prominent towards the finish. Well structured, harmonious and with good persistence. The slightly spicy and balanced flavor is excellent for using it raw, fried and in roasts. Ideal for toast, vegetables, and salad dressing. Enriches pastas, rice, stews, roast meat, fish, and sauces.
